The U.S. Department of Agricultural Research Service  has a great listserv of research updates and a monthly science magazine that is also available electronically. Easy-to-read Spanish publications.

The National Cancer Institute offers a variety of publications in English and Spanish. Many of them are on nutrition topics. Visit  the web site to view and download them.

A variety of information including presentations and publications on nutrition and exercise is at the Oregon State University Extension Family & Community Development web site.
