July/Aug 2004 HIV Nutrition Update

The July/Aug HIV Nutrition Update Newszine issue is in the mail and on its way to subscribers.

The feature article in this issue, "Developing Nutrition Education Materials" offers clinicians insight on the development of effective nutrition education materials. The article is written by Patricia Slinger, MPH, RD, CDN and Tamara Simpson, RD, CDN who are nutritionists working at God’s Love We Deliver (GLWD). GLWD is a meal delivery program for people with serious illnesses in New York City, NY. Ms. Slinger is the Director of Nutrition Services and has published various nutrition education materials. She has an extensive background in public health nutrition and has been a presenter on many nutrition and chronic disease issues. Patricia and Tamara provide suggestions and guidelines to help people counsel individuals with different reading and comprehension abilities. Numerous resources noted within the article help readers to learn the art of effective nutrition education. 

Issue 49 also includes:

Update on Selenium and HIV/AIDS 

A recent Press Release on selenium from the Institute of Science in Society ISIS compliments our feature article in the HIV Nutrition Update March/April 2003 issue. "Selenium Conquers AIDS?", notes that depleted selenium in soil creates disease and regions of selenium deficient soils are associated with an increased incidence of AIDS. One American AIDS expert thinks that the AIDS epidemic can be curtailed with adequate ingestion of 'appropriate micronutrients'. For additional information on this subject, subscribers to the HIV Nutrition Update can review previously published newszine issues. As noted in theSept/Oct 2001 issue , N-acetyl cysteine (NAC) supplementation may be beneficial to people on highly active antiretroviral therapy (HAART). 
 

Call For Original Articles

HIV ReSources is scheduling articles for publication in the 2005- 2006 HIV Nutrition Update year. We are particularly interested in publishing preliminary research results related to nutrition and HIV-positive people. Articles that focus on the successes and problems of attempting to conduct research related to nutrition and HIV would be helpful to clinicians considering such research. 

Our subscribers are varied from RDs to MDs, RNs, hospitals, ASOs to savvy HIV-positive people. Most subscribers are currently organizations with libraries in the US and Canada.. Articles are written for clinicians at the college level (Flesch- Kincaid Grade Level 12-16 with no more than 15% passive sentences). Most feature articles average about 3,200 words. We have several editors that review articles prior to publication and everything is done through the Internet. Newsletter previews. Call For HIV Nutrition Update Editors

This is a 'Call For Editors' for the peer-reviewed HIV Nutrition Update newszine (published quarterly by HIV ReSources, Inc). The newszine is designed for clinicians providing nutritional counseling to people living with HIV. Conference Updates

* The Centers for Disease Control and Prevention (CDC) 2005 National HIV Prevention Conference was held on June 12-15, 2005 in Atlanta, GA. 

* The American Dietetic Association (ADA) Food & Nutrition Conference & Exposition was held October 2-5, 2004 in Anaheim, CA. Visit the ADA Web Site for more conference  information. 

* August 12-15, 2004 marked ANSA 2004, the 11th Annual Association of Nutrition Services Agencies (ANSA) Conference that was held in Manhattan, New York. This year ANSA offered two Pre-Conference Institutes on Thursday, August 12th: 
• "The Future of AIDS Services: Mergers, Acquisitions and Expanded Missions"; and 
• "Nutrition and Co-Morbidity's - A Special Institute for Nutritionists and Dietetic Professionals". 

Special Conference Institutes were also held on Friday, August 13th: 
• "AIDS, Nutrition and Africa – A Community-Based Response"; and 
• "Advocacy and the Ryan White Reauthorization". 

Professional Development Day, held on Friday August 13th, included workshops and activities addressing the issues that arise when we need to lead through change, manage an ever growing workload and motivate others to join us in this adventure we call work. ANSA offered seven workshop topics by track including: •Administration; •Board of Directors; •Client Services; •Development; •Food Services and Distribution; •Nutrition; •Volunteers; along with One-on-One Consultations that were available with experts in every field!

Food and Water-Borne Disease

The Center for Science in the Public Interest recently reported that contaminated produce (especially raw seed sprouts such as alfalfa sprouts or mung bean sprouts) accounts for most individual cases of foodborne illness. Consumers must wash all produce thoroughly before eating it. Contaminated seafood is responsible for the majority of foodborne outbreaks. 

To avoid exposure to food or water-borne illness, HIV-positive people need to always follow good food safety practices and avoid eating certain foods. These products include foods that might contain raw eggs such as hollandaise sauce, Caesar and other salad dressings, certain mayonnaise, uncooked cookie and cake batter, unpasteurized dairy products such as egg nog and unpasteurized fruit juice. 

Drug-resistant bacteria are still common in grocery chickens according to a January 2003 Consumer Report  so consumers must cook all poultry thoroughly. Store bought chickens including premium, kosher and organic brands may contain both salmonella and campylobacter. (1) Other foods that may cause foodborne or waterborne illness include: undercooked meat and seafood (especially raw shellfish). 

Cooked poultry and meat are safest when their internal temperature is equal to 180 degrees Fahrenheit. Although the risk for foodborne illness is less by consuming poultry and meat that have no trace of pink color, the absence of pink does not always correlate with internal temperature. Consumers must avoid cross-contamination of foods so uncooked meats must not be exposed to other foods. Numerous attitudes are responsible for motivators and barriers to adopting food safety recommendations. (2) Motivators include staying healthy and getting adequate food safety education including having and knowing how to use a thermometer. Barriers include the time it takes to learn about good food safety practices and the cost of buying a thermometer. Other food-related issues that people living with HIV should be aware of include mercury in fish, acrylamide, mad cow disease, and obesity.

The Food and Drug Administration (FDA) recently posted the 2004 Program Priorities for FDA's Center for Food Safety and Applied Nutrition. The work plan consists of four primary sections: Assuring Food Safety and Security; Improving Nutrition and Dietary Supplement Safety; Assuring Food and Cosmetic Safety; and Assuring Food Safety: Crosscutting Areas. Know HIV/AIDS Campaign

National HIV Testing Day 2004 is June 27, 2004. 

For the second year, Viacom and the Henry J. Kaiser Family Foundation supported theKNOW HIV/AIDS Campaign. KNOW HIV/AIDS is the first global cross-platform public education initiative on HIV/AIDS. Forty Public Service Announcements (PSAs), including an ad produced under the Kaiser Family Foundation's partnership with MTV's Fight For Your Rights:
Protect Yourself and BET's Rap It Up campaigns, were designed. Numerous activities continue to occur including the provision of information on HIV testing online and on television along with PSAs to run across television, radio and outdoor media outlets. Several popular TV series aired episodes with HIV/AIDS themes directing audiences to resources that provided information about where to get tested in their local areas. 

KNOW HIV/AIDS Resources including free PSAs, Special Programming and Campaign Materials such as the "Get Informed, Get The Facts" booklet are available for download or in a hard copy format through the KNOW HIV/AIDS Web Site.

Food Recalls/Contaminated Food

The Food and Drug Administration announced the following information.

* Stonington Sea Products Cold Smoked Salmon were recalled due to possible contamination with Listeria monocytogenes bacteria. 

* Paramount Farms, Lost Hills, California recalled Whole Natural Raw Almonds due to possible Salmonella contamination.

* Queso Duro Viejo/Hard Cheese due possible Salmonella contamination. 

* The Food and Drug Administration announced two outbreaks of the foodborne illness cyclosporiasis associated with raw basil and mesculin/spring mix salad in Texas and Illinois. 
 

HIV Nutrition Update - Newszine Issue 48

The May/June 2004 HIV Nutrition Update is now available. Issue 48 is on the Internet. 

The feature article, "Examining the Role for Conjugated Linoleic Acid in HIV/AIDS - Part II: Clinical Intervention Trials" is by John Babish, Ph.D. Dr. Babish is a molecular biologist who served as a tenured Associate Professor of Pharmacology and Toxicology at Cornell University for 17 years. He has authored or co-authored over one hundred peer-reviewed scientific articles, eight position papers, and two book chapters. The inventor of 14 U.S. and world patents, he is the Chairperson of Bionexus® Ltd. located in Ithaca, New York, the makers of NutriVir®. Dr. Babish also served as a member of the Macronutrients, Micronutrients, and Non-Essential Dietary Supplements sub-group of the National HIV Nutrition Guidelines Working Group. The group's work did not include a review of Conjugated Linoleic Acid (CLA). 

Part II of Dr. Babish's article highlights clinical intervention trials using conjugated linoleic acid (CLA). His original research is on CLA, N-acetylcysteine, and a patented organic form of chromium in HIV patients with antiretroviral therapy-associated lipodystrophy. The phase I study
will help researchers to make a preliminary assessment of the tolerability, safety and efficacy of BION493, the dietary supplement noted above. 

Also, in HIV Nutrition Update Issue 48, the Medwatch column reviews information on Lexiva (fosamprenavir calcium), a prodrug of Agenerase (generic name, amprenavir). The Update Central column offers information on vitamin supplements. We highlight the need for vitamins, detrimental
effects of vitamin/mineral ‘mega’ doses, and issues related to research on dietary supplements, particularly vitamins.

Seventh Annual HIV Vaccine Awareness Day 

HIV Vaccine Awareness Day is May 18, 2004. Nearly one million Americans are living with HIV/AIDS, and more than 40,000 people become infected with HIV each year. HIV is the number one killer of African-American men between the ages of 25 and 44, and the third leading cause of death among Latinos between the ages of 35 and 44. Food Safety Resources

* The Food and Drug Administration (FDA) is enhancing its surveillance of foodborne disease and increasing the inspection of domestic and foreign food-processing plants. The food industry is also stepping up safety measures to ensure that its products are produced as safely as possible. Although the deliberate tampering of food to cause major disease outbreaks is rare, recent news events are focusing on the increasing possibility of such tampering. * The U.S. Department of Agriculture (USDA) continues to monitor the Avian Influenza situation. For recent news and general information on Avian Influenza visit the following Web site: Web site

* The FDA offers information on trans fat to complement an article in the HIV Nutrition Update on omega-3 fats. FDA now requires food manufacturers to list trans fat (i.e., trans fatty acids) along with saturated fat and cholesterol on the Nutrition Facts Label. View more detailed information

* FDA now has a web page that answers questions about 'Bird Flu', which can cause disease in domestic poultry, and potential risk to eggs. 

* The Emerging Infectious Diseases Journal is online.

* Articles about preventing "Listeria" contamination in foods are at the new food safety web site

* FDA recently learned that certain Crystal Farms Butter Blend Margarine Quarters and Butter Blend Margarine Solids may be contaminated with Listeria monocytogenes. Zander's Creamery butter and butterine products are also suspect. 

* The FSIS' brochure, Safe Handling of Take-Out Foods is now available.

He is the son of Sharon Ann and Gary Meyer, the brother of Wendy Olivia Wright and uncle to her son Zack. Dean and his wife Michelle have a beautiful little girl named Jade.

Dean helped 'behind the scenes' to keep HIV ReSources alive. He was proud of our work at HIV ReSources and felt that our mission to educate people about HIV, AIDS, and nutrition was important.
